Famous Dave’s ghost kitchen set to open Thursday

FORT WAYNE, Ind. (Fort Wayne's NBC) - Famous Dave's set to open in The Fort, but plans to operate in a building with another restaurant.

The restaurant industry has been hit hard by the pandemic, but a new concept is being adopted by Granite City Food & Brewery.

According to management, the restaurant is opening a new Famous Dave's ghost kitchen in the existing Granite City building.

What is a ghost kitchen? Ghost kitchens function solely as a kitchen for delivery and pickup, giving customers access to Famous Dave's menu while remaining confident about their personal safety.

With this concept, the restaurant increases the reduced hours that their existing employees have, gives their customers more dishes to try, and increases the revenue for the business.

Since Famous Dave's is using Granite City's kitchen, customers will walk in and smell the barbecue being cooked in the back, but will only be able to enjoy the food via takeout.

Adam Lehr, Senior Vice Preside of Operations, says this idea has thrived during the pandemic since dine-in experiences have been limited or cut off completely.

Lehr also says if this becomes a hit in The Fort, they will eventually offer dine-in options for Famous Dave's.

The grand opening for the Famous Dave's ghost kitchen is set for Thursday.
